Numbers use the median daily sales (not the average) plus a 15% buffer, so one-off large orders don't distort the pars.
Catering orders are excluded. The light bar behind each number shows relative volume within the station.
Station assignments are sample groupings. Sarah should provide actual station-to-dish mapping.
